The sound tracks to Far and Away (John Williams did the score, it is very lush and Irish, with Copeland overtones) and Braveheart (samething minus little Johnny Williams). In both scores the incidental music is fairly long and lush. Hans Zimmer's score to the Last Samurai is beautiful (Hans Zimmer is pretty amazing). All of those have a very interesting themes. Like erinpie, I enjoy the sound track to Dances with Wolves as well (but it tends to get a little monotonous for me).
I'm a big fan of Irish solo harp when I let my mind wander.

Ray Lynch is a very interesting new age composer.
Any of the Circus de soliel (sorry about the word-mangling) stuff is very good for yoga, not sure about writing.
Do you like electronica? Anything by Tomita is pretty cool. He is just ripping off classical music, but it is trippy.
In the classical range, I'm a big fan of Debussy (pretty much any of his stuff is pretty good to let the mind wander to). Appalachian Spring by Copeland is very beautiful. I like the Florida Suite by Delius.
