It was cool and grey enough to merit soup when I was checking out my pantry this morning, but it's warming up, so it might wind up being too warm. We shall see.

I stuff my peppers (bell peppers, usually green, sometimes red) with rice, chopped sauteed onions, garlic, tomatoes, some cheese, and sometimes ground meat, along with spices -- usually a little bit of dried chile peppers, finely ground. Sometimes also corn, and/or cilantro.

It's warm enough here that the only soup that truly sounds good is gazpacho. But I'd make corn chowder if the temperature was right.

I haven't made stuffed peppers in years, but now they sound really tasty. I'll have to add appropriate ingredients to my grocery list. The stuffed tomato recipe in Quick Vegetarian Pleasures is also quite good.
