For dinner I'm making my chicken piccata (where I take a 'standard' chicken piccata recipe [lightly breaded and fried chicken breasts in a lemon-caper-butter sauce] and multiply the lemons by 3, because I love a sharp, fresh lemon flavor), with a side of spaghetti in lemon butter sauce.

What would you serve with this as a side dish?

I have fresh carrots, celery, cherry tomatoes, yellow bell pepper, apples, a mix of greens, broccoli raab, onions, potatoes, delicata squash, butternut squash, potatoes, onions, rhubarb, shallots, sunchokes, mushrooms, and pears. Plus garlic, several kinds of herbs, lemons, and limes. Oh, and frozen peas, frozen spinach, frozen corn, canned tomatoes, canned green chiles, and canned chipotles in adobo.

Ideas for a vegetable side that would go well with salty-sharp-bright chicken piccata? (Preferably not a starchy one, since the spaghetti is filling that niche.)

I am a big fan of this cooking light recipe which is basically chicken piccata and spaghetti with red bell pepper, zucchini, yellow squash, and cherry tomatoes. Since I usually go for one-dish meals rather than veggies on the side, I'd suggest throwing your yellow bell pepper, mushrooms, cherry tomatoes, and some greens into your piccata.

Okay, now I am totally craving chicken piccata. :p Too bad I don't have any chicken, or much of anything else in the house. I do have spaghetti, lemon juice, capers, parmesan, and chicken broth though . . . I suppose I could make spaghetti piccata-ish?

Since chicken piccata gets most of its flavor from the lemon and capers, I don't see why not!

(And thank you for the idea... making a one-dish meal with the veg and the chicken is a great idea.)

Well, since greens go bad first, I'd say a green salad with cherry tomatoes and bell pepper! Maybe you can use a lemony vinaigrette?

A side salad with the mixed greens and a scattering of grated carrots and celery, tomatoes, a bit of thin-sliced onion, and however many sliced mushrooms can fit on the plate. A dessert of sliced or diced apples and pears? Or, if you feel like going all out, poach the pear(s) in a wine thing?
