Crawfish of course; I couldn't handle the fully-intact ones (although Avani and Rick totally went to town) but I looove me some crawfish cakes, pie, stew, whatever!
Gotta get an $8 giant frozen margarita and refill it every chance you get.
The interesting cemetary (forget what it was called, it's a touristy thing) had a tour guide who told some interesting stories.
Can't remember anything else, except oh yeah, it looks cool by the river! Which would probably disintegrate you if you fell in I bet. =P
