Often, when I'm out at restaurants, I'll order their version of the ubiquitous garlic bread/cheesy bread. Sometimes, when I'm home past midnght and want a bite to eat, I want something garlicky/cheesy/savory to snack on. Thus....
Midnight Craving Garlic Cheesy Bread
If you're using an English muffin, split it in half. On each piece of bread or half of English muffin, put half the butter. With a garlic press or microplane grater, finely smush the garlic. Put half the garlic on each piece of butter.
Put the bread or English muffin under the broiler, or in a toaster oven, for 2-4 minutes, until the butter is melted and the edges of the bread are just beginning to color. (But not brown. Take it out before they get even a little brown.)
Spread the melted butter and minced garlic around with a knife. Sprinkle half the cheese on each slice. I used grated mozzarella, because I had some left over from a pasta dish; any grated cheese that you like will do beautifully. Put back under the broiler/in the toaster oven, and heat until the cheese is melted and bubbly and the edges of the bread are lightly browned. Eat.

- 1 tbsp butter
- 1 clove garlic
- shredded cheese, about 1/2 cup, whatever you have on hand
