Rice with flaked seasoned salmon, topped with nori and shiso; pork loin sliced thin, layered with fillings (half shiso-and-umeboshi, half nori-and-leek-miso), rolled, breaded with panko, fried, and sliced on the bias; kale simmered with dashi and seasoned soy sauce with sesame seeds; and pickled radishes, carrots, and cucumbers.
The pork loin was the best thing -- and of that, the shiso-and-umeboshi was the best: it was like breaded sweet-and-sour pork, but with the sweet-and-sour on the inside, from the shiso and umeboshi. (And also healthier than most sweet and sour, because it didn't rely on a sugary sauce.) Nom.
