Per a Cook's Illustrated recipe, I usually roast them in a 450-degree oven (I think, maybe it's 400), and they're so delicious. Like French fries, only better.
I do something similar - toss them in a little good oil, maybe tuck a few garlic cloves in with them, splash them with balsamic vinegar when they come out of the oven.
