Risotto w/ shrimp sounds like pure heaven. :-)

I adore risotto, so I agree! Should be pretty easy, too, to stir the shrimp in in the last few minutes so the residual risotto heat cooks them through...

...I think even if I don't make that today, I'll have to make them soon.

In the summer, tomatoes (either grape or cherry) with some olive oil and sea salt -- and maybe basil if I have some handy -- is the ultimate indulgence. Tomatoes are just so delicious when they're in season.
